It's an electromagnet with one turn reversed at the top. The magnetic field is strong at the bottom but less within that reversed turn. That's why it doesn't just throw the aluminum button out. (Aluminum is repelled by a magnetic field instead of attracted like iron.)

I think they are pumping water through that copper pipe to remove the heat from the high current it takes to do that.
