Weak acid from the lemons, and the metal of the tin-foil (and possibly the stove top too) created a weak electric current which caused the muscles to spasm ... and tada!

They are skinned Eels. You skin them by driving a nail through its head and skin them like a snake. Then you cut the head off. They are known to have spasms like that long after the head has been removed. Makes it hard to fry them but they taste really good when smoke-baked in an owen.

The soul of the fish was rejected from entering fish heaven, so the soul desperately tried to return in to the body but the body was to damaged. The fish is now condemned to an eternity of fish hell! That's what really happened!
