Could add almost anything to the center ... cheese, or maybe a
pineapple ring and some Feta, as an example.

a great idea.
now where do you get the mold thingy from?
a web search will give the pictures on dozens of sites
in as many languages but non of them have a link to a
source for it?!!?

We have it in most restaurants in Greece,
"stuffed burger with cheese"
cheese must be in the center. because if not, when you cook it in grill will melt and go.
