Ever dream of being that go-to person at BBQs – the one who can effortlessly sear steaks, flip burgers, and roast veggies to perfection? Whether you're starting from scratch or simply looking to refine your skills, this article will transform you into a backyard grill master.
1. Choose the Right Grill
The first step is to choose the right grill. The grill you select will have a direct impact on the flavor of your food – perhaps more than any other tip mentioned in this article.
While there are dozens of brands and hundreds of different models, there are a few basic categories of grills that you should be aware of.
• Charcoal grills. If you love that smoky meat flavor, then you’re going to want some sort of charcoal grill or ceramic cooker that uses lump charcoal. These grills take more time to set up and manage, but the flavor is hard to beat.
• Gas grills. Do you want convenience and versatility? Nothing gets going faster than a gas grill. With that being said, it won’t give you the same smokey flavor that some people want.
• Pellet grills. Consider a pellet grill the best of both worlds. It allows you to grill, smoke, and even bake – all with the same appliance. You can also play around with different hardwood pellets to infuse your food with that wood-fired flavor you’re seeking.

2. Master Direct vs. Indirect Cooking
There are two primary grilling techniques that you need to be comfortable with in order to obtain the status of “grill master.” We’re talking about direct grilling and indirect grilling.
With direct grilling, you place the meat (or whatever food it is that you’re grilling) directly over the flame. This is great when you have a thin cut of meat or food that cooks quickly. For example, steaks, burgers, fish filets, and chicken breasts are ideal for direct cooking.
As the name suggests, indirect grilling is where you avoid exposing your food directly to the flame. This can be done using a number of different techniques. With gas grills, it’s common to light one section of the grill and then leave the other section unlit. You place the food on the unlit section. This prevents it from excessive flame exposure while still giving it heat from the other side. With a charcoal grill, you might use something like a deflector plate to create a barrier between the food and the flame. (This only works when you have the grill’s dome closed.)
3. Learn the Art of Marination
Marination is a culinary technique that serves two main purposes. First, it infuses your food with flavor. The ingredients in the marinade penetrate the surface of the food, adding depth and complexity to the taste. Second, the acidic components in the marinade can break down tough protein fibers in meats, making them more tender.
A basic marinade consists of three primary components. There’s acid to help tenderize the meat. (This can include vinegar, citrus juices, wine, etc.) Then there’s an oil, which helps distribute the flavor and helps in the browning process when food is grilled. Finally, you have seasonings to impart flavor. Typical marinade spices include salt, pepper, garlic, onion, soy sauce, Worcestershire sauce, or herbs.
When marinating, always remember to reserve some fresh marinade for basting or serving - never reuse marinade that has been in contact with raw meat. Mastering the art of marination will bring out the best in your grilled foods and elevate your status as a true grill master.
4. Use the Right Grilling Tools
They say a carpenter is only as good as his tools. This is true for a grill master, too. While skill and experience matter, it’s ultimately the tools that allow you to do your job. Here are some must-have tools:
• Grill tongs
• Grill spatula
• Grill brush
• Meat thermometer
• Barbecue fork
• Grill gloves
• Basting brush
