The 'dancing' is the Kata, a series of moves drawn from whichever martial art you are studying, perhaps Karate. It is created to help with learning fluency between moves.

The shouting is more relevant in the fighting aspect as a method of intimidation.

Just because they put it to music doesn't mean she doesn't know what she's doing. Quite clearly she is very good indeed.
