We eat that in Norway as well. We call it "smalahove". It's delicious.
The best meat on the sheep is the cheeks, and the meat around the eyes. Fact.
If you are really hardcore you eat the eye balls, brain and tongue, but I stick to the meat.

It isn't just an Iceland thing.
