many artists back then were poor and had to reuse canvases. plenty of paintings were painted over, but that doesn't necessarily mean these images are not hidden on purpose

Nah, this is simply the result of painters not having enough money to buy new canvas for every painting they made, so they reused old ones. Or simply didn't like the image, and corrected it.
