Hey, don't knock the raw horse. It's unbelievably good. The standards for processing are much different here in japan.
Also- #30 is not a fish head, it's a tuna collar bone and it is very tasty.

Should try the Fugu-sashi, Fugu Kara-age, Fugu Hire-zake, Fugu-chiri with fugu liver and Fugu-nabe.
