They do some pretty cool stuff with nitrogen gas filled water balloons with a small amount of water(or edible liquid) inside. They roll and spot freeze with liquid nitrogen then remove the balloon casing for a frozen hollow treat. Some famous chef/scientist does this. Homaro Cantu
...probably not the case here though.
